For a well-documented discussion of Israelite history as it relates to Egypt from patriarchal times through the exodus, see James K. Hoffmeier, Israel in Egypt: The Evidence for the Authenticity of the Exodus Tradition (Oxford: Oxford University Press, 1996). This 225-page book focuses heavily on archaeology and on some of the points of debate among scholars. It is fairly academic, though not hyper-technical. If you like to explore this kind of thing in detail and "dig deeper" into the archaeological/historical/literary evidence that informs our understanding of these periods, it is highly recommended.
